What makes your beef different?
Every cut is hand-picked and dry-aged for flavor that’s earned — not rushed. No preservatives. No shortcuts. Just bold, USA-raised beef with backbone.
Is this local beef?
We source from the Midwest, with purpose. We’re not chasing trends — we’re chasing flavor. Our beef comes from cattle raised with care, in a way that honors the animal and delivers an experience worth remembering.
Why dry-aged?
Because time changes everything — including taste. Dry-aging naturally breaks down the muscle, unlocking bold flavor and unmatched tenderness. It’s the long way for a reason.
Do you ship?
Not yet — but it’s coming. For now, you can shop in person at our Alexandria boutique. We believe in offering an experience worth remembering — one cut at a time.
How should I store the beef?
Keep it frozen. We vacuum-seal each cut to lock in flavor and tenderness. When you’re ready, thaw it slow in the fridge — no shortcuts.
How long does the beef last?
Frozen solid, it stays prime for up to a year. Once thawed, we recommend cooking within 3–5 days.
Storage times may vary depending on handling and home freezer conditions.
What does "Raised Under 30 Months" mean?
Cattle raised under 30 months ensures optimal tenderness and flavor. Younger cattle naturally produce beef with finer marbling and a smoother texture — and that’s exactly what we deliver.
